Good sushi. Good people. Good times.
See you at Squid Ink.

Squid Ink Sushi has been part of Peoria for years, built around a simple idea: great food, good drinks and a place people genuinely want to spend time.

What started with sushi has grown into something more. Our menu brings together fresh sushi and sashimi, shareable plates, hot dishes and longtime favorites, alongside cocktails, happy hour and an atmosphere made for everything from a quick bite to a night out.

But more than anything, Squid Ink is a Peoria restaurant. We’ve grown alongside this community, welcomed generations of regulars through our doors and become a familiar place to meet, celebrate and come back to again and again.

Now part of the Sky Restaurant Concepts family, we’re building on everything Peoria has loved about Squid Ink while bringing fresh energy to what comes next.

Parker and Emily Ganem are the owners behind Sky Restaurant Concepts, parent company of Squid Ink Sushi, Sparrow | Trailhead and Highball. They live in Peoria, work in Peoria and love being part of the community they call home.

Alongside Libby Estes and Chef Schuyler Estes, they’ve built a team focused on creating places where people want to gather, eat, drink and stay awhile. Bringing these concepts to Peoria has been incredibly fulfilling, and they’re excited for many more years of growing alongside the community.

Peoria is home. We’re just getting started.
